I think it's great that the descendants of the Kaifeng Jews want to be Jewish again, but I dislike the way that they're always re-introduced with Ashkenazi customs.
The Kaifeng Jews were originally Persian. They didn't wear knitted kippot and eat pastrami.
Btw, there's no reason why the shouldn't keep some Chinese customs. There's countless Ashkenazi customs that are German, not Jewish.
the european customs are the result of americans reaching out and restblishing chinese jews roots. When they teach them gow to practice the religion it would most likely be ashkenazi as they make up th largest population of jews in america. Its a great video though.
@MondoBeno I totally agree with you. Conversion or re-connecting to Judaism should not mean having to become Ashkenazi. Research should be done to revive Chinese Jewish customs and rebuild the Kaifeng Synagogue in the Chinese style. The same thing is happening with the Belmonte Jews where Ashkenazi rites are displacing their unique version of Sephardic customs.

Is not knowing how to relate to their ones Jewishness and therefore being Jewishly deficient better that receiving a viable Jewish tradition from your teacher, your connection to Mt. Sinai? The Ashkanazis considered that Mizrahis are not ready to rule anything yet even though Mizrahi Jews were a majority in Israel. Many Mizrahi Jews listed and followed the ashkanazi rabbis and elected ashkanazi politicians.
This all changed in 1980s when Rabbi Ovadia Yosef formed the Shas party and unity Mizrahi Jews (SORT OF)

Conversions are a tricky thing in Judaism. People who are accepted as Jews in one country might not be accepted that way in Israel or vice versa.
It all depends on what you want to do. Anyone can say "I'm Jewish" but if you try to enroll your kids in a Jewish school, they may demand "proof."
