The bread and wine are not "said to be" "transformed" during the Creed. The transmutation takes place during the epiklesis. It's quite a bit later in the liturgy after "Thine own of Thine own..." and ending at "Amen! Amen! Amen!"
And don't forget, we confess that the bread and wine in the cup are "truly", not merely "said to be", the Body and Blood of Christ! :-)
