why dont you put all the grains n theplate and make a bit of a hole in the middle to put all the veggies and meat in? thats the way everyone i've seen makes it

This is the recipe my grandmother has been using all her life. She is from Rabat.
Rabat is the capital of Morocco and people there cook couscous with many vegetables that people might not use in the country side because they don't have access to them.
Tomatoes have been used in Rabat since they came from the Portuguese and Spanish from the Americas.
@novaio and meddymoo: I'm pretty sure there are different recipes for couscous in each part of Morocco as I just came back from Morocco and the couscous I ate was different in Agadir, Rabat, and Casablanca. When I make couscous, I use different veggies everytime--so screw you and your fake, non-existent, traditional couscous!

I really appreciate the efforts out into this dish, but I'm Moroccan and I can tell you this is nowhere close to real authentic Moroccan couscous. we never use tomatoes, coniflower and green peper in moroccan couscous. I would suggest you consult some Moroccan cooking websites for the real recipe and again I appreciate the efforts of discovering a different cuisine.
Well, I am Moroccan, so is my mother and father. The woman cooking this is my grandmother. She has been cooking couscous all her life in Rabat. Maybe you don't know how my family cooks couscous but it's obvious that your recipe different, I recommend you learn how people cook food in different parts of Morocco.

Great! Actually a lot of the ingredients both cultures use are similar. We all share the culture from Andalusia.
Couscous is simple, very filling and very healthy. Please follow the recipe closely. Once you have cooked it a few times, you can experiment and add vegetables that you might find are missing.

For 4-5 people you need about 1 cup of couscous each and an extra cup for prosperity...
so n+1 in your case 5 - however this is just a guide - as I usually eat a lot!

Saffron is important, so make sure you get fresh, potent safron from an ethnic food store.
