When you open some snack with your beer a spanish will say you "you´re eating a tapa" when one swiss serves you a traditional swiss melted chesee raclette a Spanish is gonna say "You´re eating a tapa"... basically Tapa means small food, even sweet foods can be. Spent time around the Basque region - home base was Biarritz. I really want to roll around the country. Everything we ate was just incredible. In the U.S. we usually give our chefs mediocre products to work with. It's amazing what your chefs do with the outstanding products you have.
