Some people are just lazy and do not put the % info in. In general, when that happens, you should assume you're watching an any% run. 100% and low% are usually special.

To expand slightly on the uploader's answer, 100% is obviously self-explanatory, but the difference between low% and any% is that any%'s only requirement is that you beat the game, while low% requires you to complete a minimum amount of tasks.
If my memory is correct, an ocarina of time low%, for example, would have you complete all the dungeons and collect their key items, while an any% would see only the spirit and shadow temples complete.

Say, does Hero Mode also get rid of stamina fruits here and there? I could have sworn there was one right next to the front gate of the academy

The uploader is good at this. When he/she dashes, they go to the VERY last part until they stop running. That takes some skill.

it's referring to how many items i pick up, any% just means finish the game with any number of items (compared to 100% or low%)
