  • I get the feeling all of this mad scientist's experiments end with a "splash of rum". :D

  • You went through all the effort of making gingerale.... and then you add artificial sweetener? Your priorities are messed up.

  • or, instead of washing the ginger, I would first ferment in primary, then syphon off the wart, and then add priming sugar and bottle ferment.

    Use Stevia - as a Sweetener.

  • Google videos of talks by Russell Blaylock or the word "excitotoxins" or "aspartame" to find out the bad news about artificial sweeteners.

  • Read "Wild Fermentation" by Sandor Katz for great healthy non-fattening recipes for not only ginger ale, but many other wonderful foods.

  • In the spirit of experimentation you could give it a try and see. I believe the amount of carbonation will be proportional to the amount of sugar, so I would guess that if you tried it relying only on the carbs in the ginger that carbonation would be weak to non-existent.

  • I make my own Ginger Tea and sweeten it with Licorice root.

    Are you sure all of the sugar is gone from the fermentation? I'd like to try it without sugar. Ginger has about 17g carbs per 100g ginger.
