What coding language do you guys use?

Also, how do you code a customized character sprite so that when equipping armor, or changing body parts, the sprite changes with all the commands such as running, class, stat information is still intact and controlled by the user? (I'm basically asking, how does changing the appearance of a character work with out having to make new sprites?)
