I'm pretty sure that those club like things you're talking about are modified claws similar to the kind found on lobsters. The actual pinching parts have probably atrophied and the musculature for moving them and carapace vastly improved.

Actually, no. The Dactyls (Weapon arms) are composed of two parts on an O. scyllarus, or Peacock Mantis (The one in the video).

The 'club' is a modified elbow, for lack of a better physiological equivalent , and the O scyllars also has a wickedly sharp blade/spear with three jagged points, so it is able to sprear/slash apart softer prey, like the Squlla (Spearers) mantis shrimp, though it is a smasher type.
