As far as the tip goes, what you have there could be fine, but that flame seems large for such a small component. I'm sure you're well past brazing temp and to the point that the joint is soft and weak as a result of the excessive heat.
what are you talking about? You want the evaporator glowing red as it makes a stronger bond and lets it flow. he is using high content silver brazing rods, not using solder as im sure is what your used to using

I realize it's thin metal you're working with there, but if it's glowing, turn the heat down a bit.
Try to use something other than that handheld flamethrower next time :) A small rosebud would knock that out in no time.

What are you talking about? a smaller tip on the torch would make it take a very long time to the reach brazing temp.
