The main problem is that owen temperature is a little bit low....in normal cooking it no need to raise up pizza on the owen sky. The role is cooking pizza on the floor. I am Ennio and I am a pizza maker from Naples....
Maybe the best business approach is (sell your product), instead of attacking everyone else. If you have a plan for the "best pizza oven" I'm sure the market will embrace you, and you will reap the rewards.

At 0:22 - 0:28 he's "doming" the pizza -- the dome is a hundred degrees hotter than the floor of the oven.

A true pizza chef ! He keeps the pizza way up in the oven for a little extra heat and so, give it that perfect finish...and taste !
I wish more chefs knew this trick. A wood burning oven is the best way to go, anyway.

It's very good pizza. But it is all crust with light cheese and few toppings. $12-14 for a pizza that doesn't really fill you up.
