First of all its not BBQ if it takes 2 1/2 hours to cook. Thats too high of a heat. I love these shows and the brisket, or butt is cooked in a couple hours. That means the ehat was around 400 degrees, you could do that in an oven. I wouldn't trust my BBQ to a guy in California anyway.
