This seems a little silly to me. Occams' razor. Rather than making the assumption of a new un-testable property called "color," why not just adjust the exclusion principle appropriately. It really does seem in this story that experiment is being interpreted to fit hypothesis rather than adjusting hypothesis to fit the data.
I wish I could take a month off from work and watch all lectures with time to take notes and work through the math myself. Thanks Stanford and Dr. Susskind.

Can one think as the reason photons do not interact the way gluons do is because there is only `one color' of photon?

@whactya It's more that, as uncharged objects, photons do not feel the electromagnetic force that they mediate.
