The reason they yell and scream so much is to get the people used to pressure, so they won't break under pressure when it really counts. He tells people when they've fucked up, shows them how to correct it and moves on. When the shit really hits the fan in the restaurant, they'll keep a cool head because they're used to it with Gordon..
