You said that you put it in ice that you had in the sink so it could melt and go down the drain. You don't want to put it in ice. You want to put it in ice WATER. I just did 9 potatoes using this method and it worked fantastic! Perfect! I didn't need ice in the water because the cold water out of the faucet is icy cold right now, so that's what I used in a bowl in the sink. I used new icy water for each potato I cooled. It was a lot of fun actually and worked perfectly.
The concept is not the scoring, its the temperature change forming condensation under the peel. You get the same effect from peeling a hard boiled egg after taking a hot egg and putting it in cold water.
I would guess it sat too long in the cold and the side that peeled is where the fluid collected.
She didnt say time frames because it would depend on the size of the potato. I noticed her hands are in the ice water so she can feel when it is loosening.
Doesn't look like it's been scored all the way around. Also looks like it is mealy, or an older potato. I can't explain your failure, but any good scientist or cook would not make conclusions based on one trial. Silly.
Maybe you didn't score it deep enough... Or maybe you let it cool too long. That might be it... I vote try it one more time and the next time, try only letting it sit in the ice bath for about 10 seconds and peel it off right away.
She didn't let it set for a while like you did.
Your tater cooled back down and the skin stuck.

You're supposed to put it in the ice water for just 10 seconds. I think you left it in too long.
