Hi Judith! I really enjoyed this and this roast sounds YUMMY! I really want to try it...you make it look so simple! BUT, I'm not a fan of bleu cheese, can you recommend a different cheese?
Actually Yogi you don't seem to taste the bleu cheese so much because the bacon and apricots balance it out! Have fun. Although maybe a Goat Cheese would work.
