if you cook it first, it becomes sooo absolutely much easier to remove the center of the artichoke...

i bought a few artichokes at the store today. After looking at other artichokes here on youtube, I am surprised of the poor quality of the artichokes sold here at my local stores. It's almost shameful they sell them. That one looks fresh. Mine are brownish, open, and I had to pick through the moldy ones.

Awesome Video, I used to live in New Orleans, and I saw them everywhere, I never tried them though, now I live in Montréal and i wish i had.... though, the reason why i never bought one is... I dunno how to eat it!!
