It's kinda hard to kill the fish without puncturing any part of of the poison so I think that's why they fillet it while it's alive. In most Asian culture they think that the fish is best served just before it dies, that way the flesh stays fresh. I mean think about, compare the taste of any fish you just caught to the fish that was imported for days. Big difference! (Just my opinion)
