Hear hear. The only reason he thinks boiling bones in a pot isn't feasible in a modern kitchen is that many modern people, particularly Brits, have lost their good cooking habits. I haven't tried Hugh's particular soup but it looks simple and easy to make, and as he says it's economical. Most importantly, it looks fresh and delicious - give me a bowl of that with a nice crusty bread roll and I'll be a happy man!

My family always made soup from the bones, it's the best you can get. if you don't want to pick the last bits of meat, just cook the flavor out even longer into the broth. It's not like you have to use any particular veg with it. Add maize and chiles or noodles and cucumber or just call it broth and sup from a cup. Not wasting food is a beautiful thing.
When your out and this is the only food on offer then you have to eat it, if there was a more ethical place to eat then i would!

Hi Tony, I'm sorry you've gotten abuse on here - I'm sure Hugh would condemn that. I've got to admit when I first watched the programme I was really shocked at what you said about broth! But I'm really glad the programme helped you to change the way you think about your chicken a bit, and the amount of it you eat - that's progress, and makes you far better than a lot of people. Well done for making changes, however small, it's still something.
I can't believe people complain that "proper" food is too expensive, then buy 'convenience' foods, made of far nastier bits than the bones that the soup was made of, and tasting mostly of salt, sugar and artificial flavourings.
We make stock from any leftover bones, and most of the meat eaters we know who do roasts do too. It makes sense as bone broth is nutritious, delicious and economical. It also shows proper respect to use every part of the animal you can. It's the 21st Century way Tony!!
yes it is me i dont knw if you watched the full programme or not (this is just a small clip of it) i was picked to go on the show due to me eating quite alot of fast food and convenience food and for my major dislike of veggies, at the very begining of the show i made a comment about "I would rather die than eat a salad" this is my phobia i just cant stand the thought of eating it, i think alot of people on here that have been mean missed the whole point of the programme
However, I would urge to give vegetables a chance. If you have an actual phobia that's a shame (is that with all veg or just salad leaves?) but there are so many different kinds that can be cooked in so many different ways - there could be some you haven't tried that you would love.

Hurrah for the chicken out! campaign, it's really opened my eyes. I also bought the river cottage meat book which is excellent further reading for anybody interested in farmed animals welfare across the board. Put it this way, I won't be eating any supermarket meat at all (as long as I can avoid it, obviously going to friends' for dinner could be tricky...). Essentially I'm a vegetarian unless I know what I'm eating is good stuff.
Ideas for next campaign? Pig Off! please. Let's show people that pigs eat each others ears.
Also in terms of economy, last night we had roast chicken. the only free range bird left was small, 0.8kg in fact. But it still fed four of us perfectly well, and we made a good stock from it. It cost £2.50. So you can still have 2 for a fiver!

The RSPCA are rubbish. Their Freedom Foods logo means nothing at all. Farms using that logo have been investigated and found to be horrific. The results were televised. The RSPCA only appear on the scene if there is a TV crew around.
so pleased that Hugh and co have brought intensive chicken farming into the limelight, it is a grossly ugly practice which i find so depressing.We had egg laying pet hens on our smallholding as i grew up, they are such sweet and delightful little animals, to treat them in this way is grossly disrespectful.I have been buying free range/organic for quite some time now, and find it very annoying when people say it costs too much,this is a poor and small minded excuse for not buying free range.

Tony highlights a common phenomenon in the modern world; that people don't want to admit that they are eating animals. It's not Stone Age to take bones & roast them; in fact it's more Stone Age to pick meat off the bone with your teeth, which we all do when we eat chicken legs, & rightly so. But the second people are shown what eating animals is really about, about the wider issue than "How cheaply can I stop myself from starving to death?", people turn off. THAT is Stone Age behaviour.

I was a single parent on benefits, then low wages . With 1 free range chicken I'd make a roast, pie, sandwiches, soup/stew & more. I always tried to buy organic/freerange meats, I'd rather eat a lentil lasagne/burgers etc everyday & have meat once a week/ month than eat standard meat more often. My son is healthy enough to now be doing physics at uni. It's my choice, and not everyone wants to do this, its about attitude and education, not money. Well done, thanks Hugh, good job.
Great to hear some sense from someone! Those budget obsessed Axminister folk were depressing me, not because of lack of funds, but because of lack of broader thinking. Its not all about money, you are right. You can make healthy veggie food very cheaply. I dont have a big budget but I've decided i'll never eat standard chicken again.

i usually roast my chicken whole then have the legs for dinner with all the trimmings. next day we will have a cold salad with the breasts. now, of course the bones have been in the slowcooker over night wich willl make a lovely leek and potato soup. there we have it 3 dinners for the price of a chicken and some veg. I live in a rural village and everyone I know uses bones to make stocks. Organic farmed meat and game is the only sort I buy. Gravies are always different depending on what they're based on. I keep stock in the freezer labelled according to what animal it came from. Great video, Hugh.

dispite what that man said at the end about parents not making broth, my mother has alwase made a soup from left-over bones and it has to be said it the best soup ever. Better than anything out of a can or packet!

Hurrah for the chicken out! campaign, it's really opened my eyes. I also bought the river cottage meat book which is excellent further reading for anybody interested in farmed animals welfare across the board. Put it this way, I won't be eating any supermarket meat at all (as long as I can avoid it, obviously going to friends' for dinner could be tricky...). Essentially I'm a vegetarian unless I know what I'm eating is good stuff.

Also in terms of economy, last night we had roast chicken. the only free range bird left was small, 0.8kg in fact. But it still fed four of us perfectly well, and we made a good stock from it. It cost £2.50. So you can still have 2 for a fiver!

I only buy free range eggs and chickens (I wish they'd tell us how cows and pigs are treated before they reach our supermarkets. We just assume their raised in a field or sty but it's important to know). I won't even buy mayonaisse that's made with battery hen's eggs. :-)

I would like to know why the RSPCA are powerless in stopping this treatment of chickens, if it were cats or dogs or any other animals they would be stopping it right away...

The RSPCA are rubbish. Their Freedom Foods logo means nothing at all. Farms using that logo have been investigated and found to be horrific. The results were televised. The RSPCA only appear on the scene if there is a TV crew around.

so pleased that Hugh and co have brought intensive chicken farming into the limelight, it is a grossly ugly practice which i find so depressing.We had egg laying pet hens on our smallholding as i grew up, they are such sweet and delightful little animals, to treat them in this way is grossly disrespectful.I have been buying free range/organic for quite some time now, and find it very annoying when people say it costs too much,this is a poor and small minded excuse for not buying free range.

just wanted to point out to those of you who think Hugh was out for his own gains, did you actually notice in the programe that he put a hell of alot of his own cash forward (it was all his own in fact) to make this programme to prove this point?
Im 100% there & will always buy free range from now on & I think the nos of people already changing speak for themselves.

Tony highlights a common phenomenon in the modern world; that people don't want to admit that they are eating animals. It's not Stone Age to take bones & roast them; in fact it's more Stone Age to pick meat off the bone with your teeth, which we all do when we eat chicken legs, & rightly so. But the second people are shown what eating animals is really about, about the wider issue than "How cheaply can I stop myself from starving to death?", people turn off. THAT is Stone Age behaviour.

i completely agree. Tony seems to be a victim of the conditioning that the supermarkets ideally want to impose. Delude someone into thinking they have no choice, and they will believe it.

I was a single parent on benefits, then low wages . With 1 free range chicken I'd make a roast, pie, sandwiches, soup/stew & more. I always tried to buy organic/freerange meats, I'd rather eat a lentil lasagne/burgers etc everyday & have meat once a week/ month than eat standard meat more often. My son is healthy enough to now be doing physics at uni. It's my choice, and not everyone wants to do this, its about attitude and education, not money. Well done, thanks Hugh, good job.

Great to hear some sense from someone! Those budget obsessed Axminister folk were depressing me, not because of lack of funds, but because of lack of broader thinking. Its not all about money, you are right. You can make healthy veggie food very cheaply. I dont have a big budget but I've decided i'll never eat standard chicken again.

i usually roast my chicken whole then have the legs for dinner with all the trimmings. next day we will have a cold salad with the breasts. now, of course the bones have been in the slowcooker over night wich willl make a lovely leek and potato soup. there we have it 3 dinners for the price of a chicken and some veg. Good video Hugh its important we now how to get the most out of our produce.....

I live in a rural village and everyone I know uses bones to make stocks. Organic farmed meat and game is the only sort I buy. Gravies are always different depending on what they're based on. I keep stock in the freezer labelled according to what animal it came from. Great video, Hugh.

Families should know how to get the most from food. We had a roast chicken on sunday, curry on monday and last night a risotto with left over home made chicken stock.
