Some people prefer fast food over raw food mainly because of cultural differences. Fast food is quick but the difference between fast food and sushi is like night and day.
@peeweesherman because hate fish so much, you have no other choice than watch a clip about sushi, logged in, and typed a comment. It makes perfect sense. Good job bro.
I don't have the willpower to finish the entire clip. I can't stand the pain watching other people eating such an exquisite food. It's like watching a perfect porn but you can't touch yourself.
sushi is really nasty, it doest smell and taste as good as it looks.. the smell makes you already vomit, the smell of raw fish like on the fish market.. half of the americans here dont know what they are talking about.. sushi suxxxx
If only the US had a food culture anywhere near countries like these. Then there wouldn't be endless patterns of McDonalds, Burger King, Jack in the Box, KFC, Wendy's, Carl's Jr, Taco Bell, Arby's, Del Taco, Hardees and Dunkin Donuts lining our streets serving shit food to the gullible masses.
Bourdain keeps asking the Japanese chefs the same question, "is perfection possible?". I don't know what he means. Perfection of what? On the Japan show he asks this of almost every chef and I don't think any of them understood what he was getting at. Does he mean perfection of the balance of ingredients along with presentation, taste and quality? I mean it's such a hard question to answer I think. I don't really think perfection is attainable because you can always improve on something.
i dont mean to question the sushis quality, but im pretty sure if i went to any japanese restauraunt where all the other patrons were damn near silent and you had that beautiful japanese music like that, playing in the background - anything would taste awesome XD
Now its price is $405~. Reservation only. You can't go to there directly without reservation. Thing is, already 2 month's reservation (lunch & dinner) is done. This means you must wait 2~3 months to eat his sushi even if you can pay $405 for a meal. I haven't gone there, but I want to. I am sure it is worth it rather than $7 normal sushi (=shit).
think thats the first time i see Bourdain in a tie. tells a lot about this man and the respect he has for different cultures. i really wish more american travellers were like him.
@PxKinRea That's different type of soy sauces prepared specifically for each type of fish / shellfish. Sukiyabashi-san does not want you to add/subtract anything to his sushi, that's why you do see any soy sauce or wasabi laying around.
I was lucky enough to have lunch at his restaurant. Easily the best / most expensive sushi I had in my life (I lived in Japan for 2 years). I stopped eating sushi on regular basis after moving back to New York, know nothing come close.
the sad thing is, no matter how much time or effort goes into food preparation and mastery of technique, a bag o' meth cooked up by some crack pot will be a better experience.
Some viewer commented Bourdain was wearing a Tie this time, first on his videos.....A NY chef wanted to show his respect to another good chef in Tokyo, I think! Yeah, Anthony seems to wear jeans all the time, everywhare, a casual guy.
@Krisnadhuaja "Jiro" the chef is very particular to the food he offers.. Regular sushi shop would let customers dip each piece into the soy sauce by themselves...but, sometime they do too much which spoil taste (too salty) or break the rice ball to make mess. Thus, he brushes the top of each piece with HIS(there are variety of them) soy sauce for the fresh fish meat, and the one you noticed, is called "Tare" made with soy sauce, mirin or sweet sake, etc. for the cooked items.
look americans!!!1 this is how you eat sushi, real sushi. Not eating some californian roll and telling your friends you had sushi for lunch!!!!!!!! Also please don't mixed wasabi inside your soy sauce!!!!!!! Also, don't go to viet, korean, chinese, and etc. own sushi rest. NOT many knows what they are doing.
@xGoC Hes talking about all of YOU ignorant asshats that go to some run down shit for a sushi place and brag that they ate sushi. It's still food, and its still something people pay for BUT ITS NOT SUSHI. the point is. don't go around talking like you know sushi when you're not willing to spend some money on it. There's a reason why people call food culinary ART.
@SBRSbulange I'm asian that lives in Vancouver, i'm not an ignorant asshat that does that. I'm saying, I used to get pissed off at those people too, but there's no point. There are so many ignorant retards. Go watch Man V. Food episode where they go into a sushi restaurant, the most embarassing thing you'll ever see LOL. Some places there aren't good sushi, its super watered down. Put shit in rice and seaweed and they call it sushi.
@cspark809 That's an ignorant comment. "Don't go to a sushi restaurant owned by [anyone but a Japanese person]." Why? If it's owned by anyone but a Japanese person they dont have a scintilla of knowledge on proper sushi? Did you ever think that non-Japanese people can be trained in classic sushi preparation (and many are) as a proper sushi chef? I have been to Korean owned sushi restaurants that are better than Japanese owned restaurants. It's the chef's training not his heritage.
@pxit212 Read what I've said. I've said" not many knows what they are doing", I didn't said all of them. And this is the truth. Sushi is like enjoying the pure taste of the fish and the vinegar rice. It was the korean chefs taught their customers to mix wasabi inside the soy sauce. Go to california, now its hard to find Japanese owned sushi restaurant. Alot of customers are satify with this imitation crab mixed sushi rolls with enormous amount of spicy-mayo based sauce.
@pxit212 So anytime Jap sushi chefs try to serve or recommend proper or more authentic style of sushi, to alot of customers it doesn't taste right and doesn't look right.
@pxit212 I totally agree. The best sushi I've ever had has been made by Max Levy at Bei at the Opposite House in Beijing, China. Max is caucasian and originally from New Orleans but studied with some of the best sushi masters in Japan, including living on an eel farm for part of his training.
@pxit212 ur right and case and point: sushi house, one of the best and well known sushi bars is in austin tx and the chef/owner is a white guy. his comment would be like saying dont go eat at a restaraunt if its not french owned because they came up with concept of restaraunts....
@pxit212 And most of the chef's with the best training are Japanese because the best sushi training is in Japan. It's just the way it is. Most sushi places (not all, but most) with non Japanese chefs are inferior. It takes 2 goddamn years just to learn how to make the rice in Japan.
@BOOLsheet That's a pretty illogical statement. "Most of the chefs with the best training are Japanese because the best sushi training is in Japan." So non-japanese cannot be classically trained as sushi chefs IN Japan? What statistics are you using to even say "most of the chefs with the best training"? I'd like to see this information so provide some statistics or don't speculate. Your comment about how long it takes to make the sushi rice is irrelevant.
@pxit212 it's completely logical. i did not say that non-Japanese people can't be trained in japan for sushi. surely it happens all the time. what I meant was that it is far less likely since it's in japan.the best sushi chefs are japanese end of story. most of the chefs with the best sushi training are japanese. thats pretty much a well known fact. it's rather like saying the best texas BBQ pitmasters are from texas. its just the way it is.im not saying others cant do it extremely well
@BOOLsheet You just said the same thing and didn't address any of the logical flaws I pointed out. Saying "end of story" doesn't make your argument any more persuasive. Poor analogy. That would be like saying the best Hokkaido sushi chefs are from Hokkaido. We're saying "the best sushi chefs can be trained in classic sushi prep and trained in Japan" That's like saying the best pitmasters of Texas BBQ learned BBQ and they learned in Texas. You can try again if it helps you feel better.
@pxit212 GENERALLY, korean owned sushi restaurants are not as great as japanese ones. there might be some korean owned restaurants that are amazing and I'm not gonna deny that. Overall i'd say japanese owned sushi restaurants are better than korean ones.
the worst one i've experienced was when i ordered "chirashi sushi" and here's what i got:
rice on a plate with shredded daikon radish on the top. and above that was pieces of sashimi and they were mostly cheap quality fish.
@r5lz You're trying to justify your opinion by using your own isolated experience (which may not be true). I went to Japan and had Korean bbq. They gave me globs of fat. What does that mean? Nothing except that that particular restaurant wasn't good. That aside, what relevance does the market price of the fish have with a chef's ability or the sushi quality? Maybe you could tell the difference between toro and canned tuna but certainly not high vs. low quality. Generalizing is wrong. Stop.
there is something amazing about so much love and dedication for a man to devote his entire life searching for perfection in a simple morsel of seafood and rice. it goes to show that humanity has it within ourselves if we only had the courage to sacrifice everything and search deep within ourselves to perfect the world around us.
FUCK THAT! I never EVER tell my customers how to eat. They want wasabi? GO AHEAD! More soy sauce? FUCK YEAH! Hell if someone said they wanted franks hot sauce I would run to the grocery store and grab him a bottle of that shit.
Fuck pretentious "artist" who tell you how to enjoy things! Yeah his sushi must be absolutely amazing, but when you sit there you are the customer and if a guy can not serve his guest, then he can not even be considered a basic cook. And yes, I do work in a kitchen.
@Gloraxi This may be the reason he's the one with 3 Michelins stare and not you. He does this with a purpose beyond regular kitchens. Think twice, not all restaurants are the same :-)
@Gloraxi You're in Japan where there are sushi joints all over the place. People are willing to pay for the experience that the man serves to them, so I see nothing wrong with being assertive about how the customer should eat. If it's wrong, then the restaurant will fail and that's that. But that's obviously not the case, is it?
@Gloraxi Lol dude, the customer is paying so much to eat what is perfection, of course they will tell you how to eat it. Otherwise, it will not be what they payed for. It is like paying to get a professional trainer in let say basketball and you choose to do something other than what they tell you. =.=
@Gloraxi spoken like a true american. "MY SUSHI DOESNT HAVE KETCHUP OR PROCESSED CHEESE IN IT, I WANT IT AND I SHOULD HAVE IT BECAUSE IM A CUSTOMER AND IM ALWAYS RIGHT! OBEY!" theres a reason why your little hotdog joint will remain pretty much completely unknown, and this guy gets international attention. and how old this guy was? will your career last that long? nope. he will be remembered amongst his peers while none of your colleagues or customers will care if come to work the next morning
have you ate raw chicken? makes you want to puke. The only raw pork i've ate was a chinese/vietnamese cured lime pork thing. there's tartare which has a weird funny texture. sushi or should i say, fish sashimi in this case, is the only type of raw meat that doesn't make you yak as easily.
also, i did say not many raw meats out there that can be eaten without puking :)
@lister740 You're just angry cause an Indian will take your home because he'll work his ass off to have a better life and you'd rather fuck around and half ass everything and be mediocre but have this undeserved self-entitlement. I also didn't realize that civilized people made gay jokes to delude themselves into thinking they were more superior somehow.

panese sushi copies Korean sushi.
Japan occupied Korea in 1910.
Japan which felt charm for sushi then robbed Korea of sushi.
And all 11000 Korean sushi chefs were arrested and executed.
Sushi disappeared from Korea and became what exists only in Japan.
Japan took sushi from Korea.

@pxit212 Don't sweat it, those people will just miss out on good sushi. They probably don't know that sushi was originally fast food.

@pxit212 GENERALLY, korean owned sushi restaurants are not as great as japanese ones. there might be some korean owned restaurants that are amazing and I'm not gonna deny that. Overall i'd say japanese owned sushi restaurants are better than korean ones.
the worst one i've experienced was when i ordered "chirashi sushi" and here's what i got:
rice on a plate with shredded daikon radish on the top. and above that was pieces of sashimi and they were mostly cheap quality fish.
r5lz 3 days ago
@r5lz You're trying to justify your opinion by using your own isolated experience (which may not be true). I went to Japan and had Korean bbq. They gave me globs of fat. What does that mean? Nothing except that that particular restaurant wasn't good. That aside, what relevance does the market price of the fish have with a chef's ability or the sushi quality? Maybe you could tell the difference between toro and canned tuna but certainly not high vs. low quality. Generalizing is wrong. Stop.
pxit212 21 hours ago
@cspark809 Also, you mix wasabi in soy sauce for sashimi.

there is something amazing about so much love and dedication for a man to devote his entire life searching for perfection in a simple morsel of seafood and rice. it goes to show that humanity has it within ourselves if we only had the courage to sacrifice everything and search deep within ourselves to perfect the world around us.

$400 for the full course is nothing compared to upscale NY sushi that doesn't even remotely come close to this one.
xotkflip 1 month ago

@Gloraxi You don't have to eat there if you don't want bro.
TheTarkuss 1 month ago
@Gloraxi This may be the reason he's the one with 3 Michelins stare and not you. He does this with a purpose beyond regular kitchens. Think twice, not all restaurants are the same :-)
Grone182 1 month ago
@Gloraxi You're in Japan where there are sushi joints all over the place. People are willing to pay for the experience that the man serves to them, so I see nothing wrong with being assertive about how the customer should eat. If it's wrong, then the restaurant will fail and that's that. But that's obviously not the case, is it?
So get your head out of your ass.
pkattk 1 month ago

@yurkler
i think so too but how many foods in the world you can eat raw without puking? Not many.
iseevideos123 1 month ago
@iseevideos123 any meat can be eaten raw is it's fresh. expect chicken (salmonella) and pork (pork worms IE trichinellosis)
kyleisreallycool 1 month ago
@kyleisreallycool Chicken and pork can be eaten raw, but you have to get it from very pure sources. Definitely not the supermarket.
Huba588 1 month ago
@kyleisreallycool
have you ate raw chicken? makes you want to puke.
