  • If only the US had a food culture anywhere near countries like these. Then there wouldn't be endless patterns of McDonalds, Burger King, Jack in the Box, KFC, Wendy's, Carl's Jr, Taco Bell, Arby's, Del Taco, Hardees and Dunkin Donuts lining our streets serving shit food to the gullible masses.

  • Bourdain keeps asking the Japanese chefs the same question, "is perfection possible?". I don't know what he means. Perfection of what? On the Japan show he asks this of almost every chef and I don't think any of them understood what he was getting at. Does he mean perfection of the balance of ingredients along with presentation, taste and quality? I mean it's such a hard question to answer I think. I don't really think perfection is attainable because you can always improve on something.

  • Now its price is $405~. Reservation only. You can't go to there directly without reservation. Thing is, already 2 month's reservation (lunch & dinner) is done. This means you must wait 2~3 months to eat his sushi even if you can pay $405 for a meal. I haven't gone there, but I want to. I am sure it is worth it rather than $7 normal sushi (=shit).

  • @PxKinRea That's different type of soy sauces prepared specifically for each type of fish / shellfish. Sukiyabashi-san does not want you to add/subtract anything to his sushi, that's why you do see any soy sauce or wasabi laying around.

    I was lucky enough to have lunch at his restaurant. Easily the best / most expensive sushi I had in my life (I lived in Japan for 2 years). I stopped eating sushi on regular basis after moving back to New York, know nothing come close.

  • At 20,000 yen ($260), Sukiyabashi Jiro is the most expensive sushi dinner out there. You gotta pay well for the best!

Regular sushi shop would let customers dip each piece into the soy sauce by themselves...but, sometime they do too much which spoil taste (too salty) or break the rice ball to make mess. Thus, he brushes the top of each piece with HIS(there are variety of them) soy sauce for the fresh fish meat, and the one you noticed, is called "Tare" made with soy sauce, mirin or sweet sake, etc. for the cooked items.

    some of the best sushi in the world is in NYC and the US

    and Viets, Chinese, Koreans etc all have their own raw fish traditions

I have been to Korean owned sushi restaurants that are better than Japanese owned restaurants. It's the chef's training not his heritage.

Sushi is like enjoying the pure taste of the fish and the vinegar rice. It was the korean chefs taught their customers to mix wasabi inside the soy sauce. Go to california, now its hard to find Japanese owned sushi restaurant. Alot of customers are satify with this imitation crab mixed sushi rolls with enormous amount of spicy-mayo based sauce.

  • @pxit212 I totally agree. The best sushi I've ever had has been made by Max Levy at Bei at the Opposite House in Beijing, China. Max is caucasian and originally from New Orleans but studied with some of the best sushi masters in Japan, including living on an eel farm for part of his training.

  • @pxit212 GENERALLY, korean owned sushi restaurants are not as great as japanese ones. there might be some korean owned restaurants that are amazing and I'm not gonna deny that. Overall i'd say japanese owned sushi restaurants are better than korean ones.

    the worst one i've experienced was when i ordered "chirashi sushi" and here's what i got:

    rice on a plate with shredded daikon radish on the top. and above that was pieces of sashimi and they were mostly cheap quality fish.

  • @r5lz You're trying to justify your opinion by using your own isolated experience (which may not be true). I went to Japan and had Korean bbq. They gave me globs of fat. What does that mean? Nothing except that that particular restaurant wasn't good. That aside, what relevance does the market price of the fish have with a chef's ability or the sushi quality? Maybe you could tell the difference between toro and canned tuna but certainly not high vs. low quality. Generalizing is wrong. Stop.

    have you ate raw chicken? makes you want to puke. The only raw pork i've ate was a chinese/vietnamese cured lime pork thing. there's tartare which has a weird funny texture. sushi or should i say, fish sashimi in this case, is the only type of raw meat that doesn't make you yak as easily.

    also, i did say not many raw meats out there that can be eaten without puking :)
