it's better to use fresh made rice, it will already be fluffy and not in clumps, you won't need to break it down so it will have that "creamy texture" you want.
For those of us who are not aquainted the real secret is "Jasmine rice". Plain old "Uncle Bens" will not do. Also, I found, a bit of cilantro on top when serving is a nice touch.
i was watching some thai show the other day and the language is extremely similar to vietnamese i'm vietnamese and when i was watching it i kept gettin confused if he was speaking vietnamese, southern vietnamese not the northern..but yeah it was cool and my girlfriend which is thai said we're closely related
Please be patient as I produce these videos on my free time. You can help me out by going to my web site and place a donation and I'll send you my Thai Lao recipe book.

Yes, this is the simplified version of khao piek which is traditionally served for breakfast. When I cook with chicken I usually make khao piek with fresh noodles (made from scratch) which I'll post the recipe soon.
My mum always made this for me when I was sick. Now I have to make it for myself. Which doesn't taste as good

I have also found that putting the rice in a blender before hand to "break it down" a little helps with the creamy texture.
