@XxFierxX no it doesn't. Sour mix is a bad product that has appeared behind bars. It often contains preservatives and the sweet/sour is often artificially produced using sweeteners and citric acid. There is no substitute for fresh limes and cane sugar. After all such a simplistic drink is made by the quality of the sum of its parts!

@joehines2 Sometimes to dilute the drink slightly. A bit of dilution can bring out some of the flavors from the alcohol. Likewise it can aerate the drink and bring some flavors out that way. Also if you have something like egg in the drink, you shake it to get a bit of head on the drink.
@MichaelJhoan true but it doesn't really dissolve in just the lime juice as you'll see if you make one there will be like a syrup sort of layer on the bottom if you let it settle because there isn't enough liquid to dissolve into until you add the alcohols

Also, some rules prescribe that the ingredients should be put in in order of value, most expensive first, least expensive last... Hence, ice will be the last ingredient you will put in your glass as its just frozen water.

I think they sharpened where it mattered (in small details) and kept the ambience of the bar intact... just my thoughts, though.
