Is there a recipe similar to this where the meat is cooked to extract the oil. The oil is kept and the meat is then throw away. Then use the oil to cook a new batch of meat similar to this recipe. Anyone know what I am talking about. My friend cooked something like this once and it was the best meat sauce I have ever tasted.
It depends on the meat, honestly. Lean beef won't leach much fat out, however something very fatty like a ham shank will drown you in fat. Don't ask how I know.

I do not know what you call the big leg muscles in England. Good luck but a brisket would work along with any tough slow cookers.

yes it is and goat is even better than lamb it is more lean with similar flavor. Also sheep and goat milk and cheeses are so much better for you tha cows milk . Babies have survived for thousands of years off of goat milk when there mothers could not breast feed and its more tolerable to lactose intolerant people.
