  • Did you cover the bottom broil tray with an aluminum foil? And is the oven supposed to be set to a specific temperature if using chicken breasts, or just the roil high function?

  • @greatgatsby44 : You can cover the bottom tray for easy clean-up. The oven was set on "broil" or if you do not have that, set it on the max (ours is 550F). If you are using chicken breast, you will have to cook for a shorter time or else the chicken will become tough and dry.

  • Is the puree made from fresh tomatoes or is it the ready made one from the store? because fresh tomato puree tastes different from the one you get from the store.. which one would be better to use?

  • @karencesteves : This is made at home from fresh tomatoes. The store bought will be better as far as the color is concerned but it will be more tart. Both options are good but sometimes tomatoes are a ridiculous price...

  • On the occasion in which I pig out at an Indian restaurant, I usually end up fed to the gills.

    A lot of the recipes include a fair amount of butter and are quite spicy indeed.

    You could add more cream or evaporated milk to thin down the sauce. You may need to adjust the spices a bit. There are many different recipes for butter chicken. We preferred our's without the onions.

  • @ShowMeTheCurry Question? the curry which you made it seems the sauce is less to eat with naan can we add more water to it so more sauce is available to be served with rice or naans?

    yes madam, everything was fresh. It started giving the strange smell when I added dalchini to butter in pan.

    there was no characteristic smell that comes from butter chicken. and after cooking it gave bad taste.

    what happened, I don't know. what I did wrong??

    Dalchini (cinnamon) is one of the basic whole garam masalas used in Punjabi cuisine. If that is the flavor that you are opposed to, then you can skip it. Many people are sensitive to the flavor of cinnamon.

  • This looks like an improvised butter chicken but still yummy. I saw a professional chef cook this once and he simply cooked the unsealed chicken meat in a smooth tomato sauce and added his ground spices to the sauce. He simmered it and finished it at the end with butter and powdered (fenugreek)methi leaves.

  • Just a suggestion....bring your microphone closer to you when you are speaking. When you record, it sounds like you are in a hallway and I have to turn the volumn almost all the way up in order to hear you. I do not make my chicken makhani this way but the video is very nice. Great job!

  • Add 1 onion before you add the tomatoes..it decreases the sour taste.Also dont forget to add turmeric powder...it gives more colour.

    After you hv fried all the ingredients as mentioned above put in a grinder.Wait fo it cool and then make a puree out of it.

    now boil the chicken in the curry.These small changes make the dish more flavourful!Enjoy

  • Tandoori masala in Butter chicken?:S Butter chicken has a very mild taste compared to tandoori foods:s. Tandoori masala is going to add a very distant pungent taste that butter chicken doesn't have If u just want the colour then might as well add a bit of red colouring.

    This recipe isn't right however I am sure whatever was made is quite tasty but not butter chicken.

  • What struck about this recipe is that the tadka (bay leaves notwithstanding) uses cardamon and cinnamon, which are essentially dessert flavorings Along with the butter, and the sugar and the heavy cream, this recipe can be described as a spicy tomato-y fudge! Put the leftovers (assuming there are any) in the refrigerator, and I dare you to resist eating this right out of the refrigerator like it were candy.

    doesn't taste bad either, some say that's the real butter chicken, while the indian red color one used to be called something else, i don't know if that's true but it's possible (the pakistani one actually relies on butter for flavour, the indian one uses tomato paste, or in the south they use coconut milk)

  • you may be right, I had an eggplant makhani oce at a buffet and it was real good, and if I recall it was yellowish in color rather than red, however the butter chicken in the same restaurant was red or at least a rather dark shade of pink, if memory serves. The owner's son is a Sikh so their emphasis is on Northern Indian/Pubjabi style.

  • equal parts weight garlic and ginger in a blender or processor, Add a little olive oil for blending and to preserve it a little longer.

    I could have sworn that Anuja and Hetal had a video on that...  I know that Vahchef does... He says in a hurry, just pound them together about five times in a mortar and pestle.....

    Boneless chicken is boneless chicken, it does not matter what part it is as long as there is no bone in it.

    This is one of those dishes that no matter how much my stomach hurts because it is about to burst from stuffing myself too much, I can't stop eating until it is all gone. This is as close to "curry candy" as it gets.

  • Actually is isn't as much as it seems. Almost all recipes look complicated when you first try them but then once you do it a couple of times, you see the process and it actually becomes simple..

    The most complicate thing with this recipe is the time factor for marianation, but that simplifies the ingredients, because you have one set of ingredients for the day before and another for the gravy.

    Tip... start the gravy BEFORE broiling the chicken, because it takes longer to boil than the chicken

  • looks good .....but, the normal indian butter chicken can be prepared in 20 mins time with well marinated chicken......the base is not just pureed tomatoes, and the butter cannot be used for frying as it clarifies and changes to ghee. use a little veg oil for frying instead and add the butter at the end to get the normal butter flavour. the sugar debate is meaningless as onion contains a good amount of sucrose as well, can add more onion, butter chicken needs to be a little sweet.

  • my recipe is a lot different from this, i use a lot of fresh garlic and ginger LOTS of it and salted amul butter is key, about 1 tablespoon per serving. and you don't add it until the end or else it turns to ghee. and i add WAY less garam masala this is very strong.

  • sugar is used to balance the high salt and acid flavors and is essential if you aren't cooking with garden fresh tomatoes.

  • you ll get it in every indian store. these days u can even find it in walmart in the indian/asian food section

  • You can make you own. I do! (Although I put amchoor in my tandoori masala, and you likely would not find that if you can find tandoori masala already)

    However garam masala can be found among the regular spices at Wal-Mart, possibly under the McCormick brand.

    You can sometimes find them in turkish or asian stores as well.

    However I will say one thing... If you follow these girls recipe to the letter, you will be buying a whole package of green and black cardamon and will only use one or two. I haven't seen any other recipes to use them so far. If you have them it would be worth your while to use them for homemade garam masala.

    And I add peanut butter, cashew nut paste... And if your sauce is thin you can add cornstarch...

    few suggestions

    pls use freshly crushed ginger n garlic - tastes better and looks 100 times better than tha slimy looking paste

    i would not bother with broilin - you could dry fry it with all the marinaded socies on a open pan stirring occaisionally

    handling raw meat with gloves was a good idea

    i know that indian curry does not involve sugar in its curry -but adding it might give a good flavor - i would try adding sugar while frying the meat though -it gives wonderful texture

  • Good point but I'd rather put the chicken in the oven and broil it. They're trying to show the healthy way of cooking it and deep frying foods is not healthy at all

    I like my makhani a little sweeter though so this is probably why they put it in there.

    I usually see recipes with "yoghurt" which is a milk and yogurt curd I think and it's supposedly used in a lot of indian dishes.

    but never the less this recipe looks equally as delicious and I can't wait to make it =D

    There's other good recipes for this dish on youtube, that have a bit more life to them! Have a look around. This one would no doubt taste good, but there's more to butter chicken if you want it.

    Then again, this recipe and clip may suit a more timid cook, which I'm definitely not, so each to their own.
