I think you miss the point. One of Morita's strong points as a comedian in the 60s and 70s was that he was able to play around with stereotypes in a way that lessened their racist power, kind of like how Russell Peters does in his standup today.
Possibly... or maybe that's the kind of roles he got offered. Either way, he did that a lot. The first movie I ever "saw" (so to speak) him in was "Mulan."
Interesting question. I think what made Miyagi work so well as a character was that he was both extremely wise but also very funny as well. The main reason he was able to bring that character to life so well was because of all the years he was doing comedy.
