I like the idea of a tunnel brick oven, it has it's own convection flow and you can build it ground level with 2 stacks, one side you load with wood and fire and the other side where you bake. Not only can you make bread in it but a prime rib roast, ham or even a whole hog if you desire. The best part is if you want to use it like a Ruth's Chris type grill at 1800 degrees you just put a rack on the up side output, use coals and wood for heat. Build a 4 corner rack you drop in and lift out
Good job on the oven but, 8 or 9 baguettes at a time, average of 10 minutes to bake + the resting time in between batches .... unless I missed something, simple math says that you could not typically bake 32 baguettes in 30 minutes. If this is the same math you used to build your oven .. I might worry a bit but I bet your neighborhood smells great.
Can't work you out. Your heart is in the riigt place for sure but you are messing up what could be good videos. By the way cement has zero thermal mass ability. Use lime.
If you thought this was bad, don't go to librivox.org and download Notes from the Underground. The chapters this guy read were excruciating. Hey Neal, ever since I listened to that a few years ago, I've been meaning to tell you. Thanks for ruining parts of Tolstoy's best novel.
Aside from the intro, which is somewhat akin to having a root canal with a knitting needle, it's as if the dude is reading from a prepared script and trying to match his voice to someone selling condo time shares in Little Rock, Arkansas. Total waste of time.

Intresting video, music reminds me of "Charlie bite my finger Remix. The script reminds me of "Plan 9 from out space" The oven.. and bread... look great.
I would like a wood fired bread oven, and I also want to build a sauna in my backyard. Do you think those two could be combined in one building? Also, I want to install vents for the heat to heat my green house in the winter. (I live in Montana)
150,200 views. I wonder how many viewers actually stayed around through the first incredibly loud and annoying first minute. I almost gave up myself. It's a very interesting and informative video but you've got to lose the first minute and re-upload it.
Great video. If you were in the process of building a brick oven "Scott design" this is terrific help. Really like it. The people who don't like the intro don't get the idea of fired ovens and good bread. The fire is a big deal and your photos are very good.
The PodChef owns a small holding and is just directing information for the uninformed in his own time for which im sure he has little of so ease up on the negative comments he is not a hollywood movie director and just be grateful that there is someone out there taking an interest for our interest.
Cut out the 70"s porn music and reduce the intro time to about 1/8 of the total time. You-sound-like-a-robot. Get a video camera instead of pictures. If you want to show how you built it then show how you built it; not just pictures after you have done it. Why not just put them in your home oven? Say something worth hearing. Good try but really bad results.
Reminds me of my old Bakery days, Do you bake other stuff in there too, as they do in countries like Cyprus with the old clay ovens, Slow cooked kleftiko etc?

Generally crappy, but the narration was particularly bad. Sounded like last place at a Carl Sagan impersonation contest. THUMBS DOWN.

@snuckyr I thought the masonry work was horrid tbh. Like, really bad... and I am a finish carpenter with only beginner masonry skills.

I've seen people make outdoor ovens out of metal oil drums. They buy the dough from the local bakery, then put it in the oven.
