When I tried this recipe last week, it was good, don't know why it happened like this today. Can you please let me know why the paneer melted.   • hi chef, i tried rus-malai everything was good except the dumplings were not sweet at all inspite of the rabri being sweet.can u please suggest what went wrong. and can u please tell me the proportion of sugar in water syrup in which dumpling had to be boiled.

  • @kapilnangia007 the ratio is 1:6. One cup of sugar for six cup of water.

    rabri: homemade thick milk that you just put on the stove to evaporate out all the water so that it becomes condensed. To this, add sugar, spices, whatever

    Thank you very for ur service to the indian food lovers.. and a heartly respect from a immature cook like me ...who gets veryvaluable input from ur videos to make food more delicious.

    i tried this ras malai recipe yesterday ..everything was good even after taking our the pieces from sugar syrup they were sponjee..but once i put them in the rabadi and after a night in the fridge the pieces turn out to be hard like cheese... why why why ??? please reply me i am waiting for your answer

  • WTF?!?!? where are the measurements??? instead of wasting time yaking about some other dude and his girlfriend, how about being more specific with your cooking instructions... from all that yak about your friend, you directly jump to the milk-pan.... and no measurements! and are you saying, milk should be boiled for an hour, less than an hour or more than hour to make rabadi??? where's your da*n structure?!?!?

  • @desidj75 Measurements are for "freshmans".

    Please do some basic and simple cooking and then come back to this, you will understand every bit of it. I bet. Take care.

  • @desidj75 rabdi is basically thickened milk after heating it on slow fire and stiring continuously. u are worried about the time taken. we get diffeent types of milk.. full cream to full toned. so a full cream will need less time to turn into rabdi.. u simply hav to watch is getting thick n bit granular.. no hard fast rules here.. on high heat it will take les time, on slow fire more time.. a broad pan takes less time. u learn cooking by cooking not by reading or watching. do. u wl learn.

  • Cant you people read? Radadi is made by boiling the milk for a long time...basically boil the milk then when it comes to a boil just let it simmer until its about half the the amount u started with...make sure to stir so it doesnt stick to your pan. This is to really thicken your milk...

  • @rshujaat it will not break if u knead it well and when u r making the balls from paneer u have to press it well and then make balls

  • @shrqfrhn86 dear friend i knw the reason listen when u pour lime juice in to milk it will start to separate then u must switch off the heat and immeditly add the ice cubes in to paneer then make soft raasmalai...........

    that was a good recipe on Ras Malai...for the first time I ever tried to listen to the procedure...easy when added ice to the mix! I will make for Ugadi tomorrow, as I called a lot of friends home. My children also love Rasmalai,Ras gullas.

  • Hi waahchef, Thanks a lot for this video. Today, I tried your rasmalai racipe and it came really good. I used lemon juice to curdle the milk but rasmalai had little bit of lemon flavour. So, I think we can use something else like citric acid to curdle the milk.
