This can be a montage !! I'm not saying that it's true or false but based on this video, it can't be stated for certain that Novak did actually played tennis on a plane in the sky !

From the moment of the take off to the landing you don't see him being on the plane !! Youjust see two people who can easily be two stuntmans for instance !!

At 2.48 there is the only image with him presumably up in the sky but that's an image than can easily be montaged
