I do agree that 8-bit isn't an accurate description because many sound processing chips of many different sizes produce these kinds of sounds. Tthe Atari ST for example - a 16-bit machine - produces these sounds via the YM2149 chip, and Bit.Trip Beat on WiiWare does a good job at this too.

The thing is is that many people have latched onto the term 8-bit because it does go back to the NES when this was (for most people) heard for the first time.
