Generally these recitations are sutras(texts containing teachings of the buddha) ghatas(hymns in praise of three jewels). it's recited to control and pacify the mind, leading it to more propitious state for the buddhist practice and remind the buddhist teachings. keep in your mind that it's not japanese, but archaich chinese being recited into japanese phonology, making this very hard to understand just by ears!
