  • every single time i do this technique, when i boil it it get a bit loose, and end up with a bagel with 2 tails... i prefer doing it from a ball and then making a hole with my finger, easier and faster.

  • this technique takes far too long, watch the guys in montreal do it, they don't even bother to scale and can turn out one from a log cut off the bulk dough in 30 seconds or so, twist pinch and roll in one motion

  • @becreg I agree, but my father used to own Montreal Bagel, and the workers used to get about 10 bagels per 30 seconds if not more
