every single time i do this technique, when i boil it it get a bit loose, and end up with a bagel with 2 tails... i prefer doing it from a ball and then making a hole with my finger, easier and faster.
this technique takes far too long, watch the guys in montreal do it, they don't even bother to scale and can turn out one from a log cut off the bulk dough in 30 seconds or so, twist pinch and roll in one motion

@becreg I agree, but my father used to own Montreal Bagel, and the workers used to get about 10 bagels per 30 seconds if not more
