  • So if I want to make this meal...I can use sour cream? What would I look/ask for at the grocery store in Canada/US? Thanks. I see all these shows using Creme Fraiche and have no idea what is. I want to try making some meals.

  • @TonyVisciardi wondered that myself. found the answer here ochef. com/206. htm

  • @TonyVisciardi i know that in quebec Liberté makes a pretty convincing creme fraiche. Look for it in the dairy thing. Otherwise, creme fraiche is simply a cultured heavy cream. Heavy cream and a little bit of lemon should do the trick if you plan on cooking with it. If you gotta add it cold, simply use sour cream (cookin sour cream could make it curdle easily). Otherwise, i also know that in cheese shops there is a little thing of devonshire double cream, which has the same consistency.

  • Its great to see that Jamie is becoming more family and budget friendly with his dishes.

  • What is creme fresh?

  • @TonyVisciardi it's a high fat soured cream, less sour than american sour cream, and considerably thinner. Originally from France, Creme Fraiche.
