  • I eat SO simple. I sometimes wonder if I should be more complicated. But so far, my raw food diet has made me feel wonderful.

  • What would you recommend using in place of the pine nuts? I have an allergy to pine nuts, but not to other nuts.

  • @kagura1331 I just used raw cashews to replace pine nuts in a pesto recipe. I'm going to try the same thing in this recipe.

  • OMG she is right, the dish is amazing. I made it and let my hubby tried it with some warm brown rice it was delicious. I used collard green instead because my kale were still small. Excellent dish. thanks jennifer

  • It seems like everybody I know finds raw kale too tough to eat. I don't get it. I make salads with raw kale leaves just like one would use romaine. It is fantastic and everybody I have served a kale salad to has really enjoyed it. I'm going to have to make a video with the recipe of my "to-die-for" kale salad.

  • I was shocked at how good this is! I just made it for lunch and ate every bit of it! I had all the ingredients on hand too. Today was my second day eating raw and I tasted the raw kale yesterday and I thought - oh no! This is horrid! But I liked the salad here even better than a lettuce salad. Seriously more mouthfeel and flavor. I used curly kale and just rolled it up as best I could. A lot of it came out just finely chopped. Tasted NOTHING like raw. EXCELLENT RECIPE!

    Lemon oil and salt are great with any greens. Add some garlic, cumin and avocados and you have an AMAZING salad :D

  • I just tried this kale salad, and it is fantastic! Since I didn't have the exact portions, I wasn't sure how much lemon juice to add, so I added a bit much I believe, but it made the kale not only edible but very tasty also.

  • @pesto12601 Hey, her recipe videos are free on YouTube. Which, by the way, cost over $30,000 to produce. If someone really wants to get exact portions, they can spend a few bucks and get her DVD or her book and support the process of making more videos. Plenty of people have made Jenny's recipes without buying the DVD or her book. But, those who do, get all the info they need to make her delicious recipes. Just so happens we'll be making more videos soon—because people bought her DVD and books.

What are you using to produce them.. a RED camera? Does the $30000 include that fancy Kitchen - why have an 8 burner $10000 stove if you are a RAW food person? Whatever...

  • Lemon juice does remove some nutirents. It also removes some of the oxalates, as kale is high in oxalats.

    Still a good recipie. What did ppl do before you tube.

  • The pine nuts seem awkward to me on paper. Do they go well with the rest of the dish?

  • They compliment the green flavor in my openion. Foods do that when you put them together. A perfect example of that is Chinese sauces. Ever tried teriyaki sauce on its own? yuk, but on chicken, with the right oils, its heaven.

  • I tried this recipe this week and it is hands down excellent. I was pleasantly surprised at how awesome it tasted. Definitely worth trying and easy to make too!

  • Oh can't believe how delicious this is! I did the recipe but substituted walnut oil for the EVOO and used walnuts and tomatoes instead. This was so good! I have to say that hands down this is my favorite Raw Vegan recipe so far. Thanks for posting this most delicious dish.

  • The foundation of the Kale with lemon juice and olive oil is the key ingredient. You can add any favorite ingredients and enjoy as well!

  • omg i just made this and it tasted soo good i cant believe it ill def. be eating kale more often i used some variations though i used avocado oil instead and added some onions and sliced almonds :P yummy!! i loove it

  • I love this! Tried it today. Not the exact recipe, but mostly the technique. I never thought you could eat raw kale but it is delicious prepared this way! I didn't put in the peppers, nuts, or olives, but instead put in some chopped red onion and minced clove of garlic. I was just too excited to eat it to think of anything else to put in. I love it and will make this all the time now varying the other ingredients each time. Thanks Jennifer!

  • Mizz Cornbleet, Yours was one of the first raw food preparation books I purchased and it is still one of the best. I truly appreciate someone who has good recipes (believe me, I've tried many others from mant sources and they still do not compare to You!). I hope You continue with Your recipe creations, as I want to incorporate more raw food into my diet, but only if it is palatable. So far, for me, You've batted 1000!

  • Love the cutting technique and love the salad. I'm not a huge fan of kale but decided I'd try this recipe. I made it without olives since I didn't have any but the salad was great! This will definitely be a salad I make again!
