  • "stir into your chocolate mixture" the mixture needs to be at quite a cool temperature. i would suggest putting it in the fridge for a bit before mixing in the cream.

    Traditional mousse is always made with egg yolks. Anyone who says otherwise is full of shit.

    French pastries use a lot of butter and egg yolks. Even traditional French buttercream icing is made with egg yolks.

    Yhep, though some people skip the eggs. But the traditional way of doing it (mousse and tiramisu) is with beaten raw eggs.

  • I just tried to make this, and the chocolate didn't melt at all. It clumped together. I guess, don't try to melt it in the microwave like she said you could.

    Here's something I do,I put a bowl of water in microwave and get the water boiling,then I take it out and set a smaller bowl with the chocolate in it inside the larger water bowl.With a small whisk or a plastic spatula,I stir the chocolate until it's melted.

    Works for me,and the chocolate doesn't scorch.

  • that's chocolate goop, not mousse. a mousse should be light and fluffy and not goopy and drippy like it shows towards the end. if you were to pipe that out, I'm certain that it would not hold its shape

  • @xISnESxOnEIx Your chocolate likely seized (i.e. lost its gloss, became lumpy and gooey- Google this for more information). The contact with the vanilla, or other moisture (i.e. water) caused the chocolate to do this.

    Perhaps you added too much vanilla, or vanilla of a poor quality?

    It's still chocolate, and since you're making mousse, you could just continue to heat the chocolate.

  • @siretokkor you have to consider the altitude you live in, sea level or mountain level, and search for tips to cook in it... if its about the volume.

  • I like her. She's extremely swell at explaining it and supporting why she does what she does to make her recipes perfect. She also does not try to be perfect. Really well done on her part, plus, the mousse was better then what I expected!

  • vanilla is for flavoring purposes so no you dont have to.

  • I have a quibble about one of the steps in her recipe, the one where she adds raw eggs to the chocolate. If you do it like that it will turn out grainy. However, if you blend 2 egg yolks, sugar and some water first cook it over a double boiler, then add it to the chocolate, it will turn out creamy, not grainy.

  • Yes the egg whites are raw, there isn't a problem with this - mayonnaise has raw eggs in too.

  • Yeah. I got salmonella accidently from raw eggs. I knew the risk before but I accidently put my finger (with some raw egg on it) in my mouth. Two days after I got sick. It was awful. I went to the bathroom a lot to throw up and so on... eww. I wasn´t allowed to eat a lot of things. I put off some weight and i had to take discusting medicines.

    So this looks tasty but I better not try it. I already got my lesson.
