that's chocolate goop, not mousse. a mousse should be light and fluffy and not goopy and drippy like it shows towards the end. if you were to pipe that out, I'm certain that it would not hold its shape

I have a quibble about one of the steps in her recipe, the one where she adds raw eggs to the chocolate. If you do it like that it will turn out grainy. However, if you blend 2 egg yolks, sugar and some water first cook it over a double boiler, then add it to the chocolate, it will turn out creamy, not grainy.

yes it is, you need organic eggs and u have to make sure there is no blood or anything when you seperate.

@angel7030 if ur worried about it, get cage-free eggs and organic... they most likely don't any problems with it. also, the extreme condition can kill the bacteria.. i think...?
