Hallo,@soetDjur -I'm Italian and I'm doing three months pickled peppers and oil. You must first chop the peppers and put on them the salt, when the liquid does not drip over (after about 2-3 days), wash them in water to remove salt Surplus and dry them again (I used a hot air gun : -) now you can put them in oil or, if properly dried, grind into powder. I started to eat them and they are good! :-) P.s. We do not shove the flesh but from the stalk. Have fun if you find them again!

@soetDjur In Sicily for centuries kept the fish in this way. i grow hot peppers and had a monster harvest. i have been trying your method but not sure if they have to come in at night or when it's raining? yes , i forgot about them in the rain. thanks, charles

@deahera Hello, why do you have to put salt on them for 2-3 days before you put them in oil? Any specific reason?
