your recipe for ganache is roughly 2:1 (choc to cream) but do you let it set after melting? and if so just on the counter or in the fridge and for how long?

I freeze the cake to improve the texture, but I carve it once it has completely thawed. The cake used is mudcake and very very firm.

The recipe you use for ganache will depend on what brand of ganache you use. With some a 1:2 ratio is good with others it's not.
I use Callebaut dark callets, and for that I use a 1:1.5 ratio (cream:chocolate)
