  • your recipe for ganache is roughly 2:1 (choc to cream) but do you let it set after melting? and if so just on the counter or in the fridge and for how long?

  • I freeze the cake to improve the texture, but I carve it once it has completely thawed. The cake used is mudcake and very very firm.

  • OMG..Nati..this is fantastic!!..I have been wanting to make a pair of Chucks for a while....what ratio do you use for chocolate to cream or can you share the recipe for the ganache?

  • The recipe you use for ganache will depend on what brand of ganache you use. With some a 1:2 ratio is good with others it's not.

    I use Callebaut dark callets, and for that I use a 1:1.5 ratio (cream:chocolate)
