  • Looks incredible but why not microwave the kale? It seems like I'd lose a lot of nutrients from boiling.

  • @halk11 Microwave ovens are a great convenience, but you do have to be aware of potential dangers. Personally, we avoid using microwaves. You can always steam kale as an alternative.

  • 10 minutes for kale? The enzymes are totally dead after ten minutes of boiling any food. You totally don't need to cook it that long. Just long enough to make it bright green and tender, maybe 3 minutes tops! Also, soaking walnuts instead of toasting will release enzyme inhibitors (and any bitterness) and makes them easier to digest.

    Otherwise, great recipe!
