Yeah, because me not clicking on the adverts automatically makes their money disappear, right? The people who make these adverts aren't going anywhere. They are big companies that make shitloads of cash every day, (i.e. movies, cars etc.).

i.e. This video has an ad for Open University, as if they won't survive w/o their YT ads! They're already a well-known facility, so if people need them, they will go to them. What difference does it make if I click on the ad or not?

Youtube partners get paid from you watching advertisements, even if you don't buy said product, because you are being shown this product, and therefore you are more likely to buy it. It doesn't matter if you actually buy it, but they get paid per person who watches it. It is very similar to television ads, except Youtube ads are much shorter. The company pays for people to run their advertisement.
