I have seen this technique of sewing circles together and folding over the flaps for many different patterns, like faux cathedral windows and pickle dish....it really works well. I like the idea of being able to "quilt as you go" and like the demonstrator said, having only one block at a time to quilt, rather than a massive bed sized quilt, is so much more manageable and do-able for those of us not particularly confident with machine quilting or just liking to work on small scales.
