If you are constructing a new home might i suggest running a second Cat5e Wire for use with Internet. Then you can just plug your internet into the wall from many locations inside your home.
Why use a double jack for instructional purposes? Get a single line jack you tool.
The terminals on a jack for a single line will be red and green, that's right, but the wire you use may not coinside. Most wire made today follow the standard color code with blue/white being pair 1. You'll have to check at the demarc, or "NID" on the premise to be sure of what color the 2 copper wires used are.
This gentleman is clearly not a real phone man, just a lowly electrician posing as one.

the wire does not look like it is UTP CAT 3 which would be minimum standard, most new construction uses CAT 5
if you twist the wires together, you are only making it possible that when you tighten the screw, one - or both wires will snap....
most CAT3 or CAT 5 wire that you will be installing will be blue/white to green/red for line 1 and orange/white to yellow/black for line 2
whenever possible all wires should be run to a centralized point (preferably the NID)

Never do what he just did. ALWAYS run a new IW all the way from new jack to the NID. Make troubleshooting a whole lot easier
