  • I really don't like how the recipe on the show is different from the one in his book. This one uses 20oz cream cheese, saves from of the crumbs for the size instead of pushing them up the side, blind bakes for 10 minutes, and only bakes for 1 hour, followed by 1 hour rest in oven. The book uses 24 oz cream cheese, puts the cheese and sugar in before the sour cream, pushes the crumbs up the size, blind bakes for 15 minutes, and bakes for 2 hours before a 1.5 hour rest. Color me confused.

  • Fun fact: When searching "good eats s5e7p1" to find this episode (watching every episode in order...got a ways to go!), the fifth result is "The Prodigy - Firestarter". Buh?

  • I once considered making a *Savory* cheesecake using "Cheez wiz", Queso dip, or a similar American Cheese Spread in place of the cream cheese, but i don't kmow what effect omitting the sugar would have on the custard setting, cook time, temperature, etc.

  • "Cook's thesaurus " Says That 14 Graham Crackers yield 1 Cup of Crumbs, which means 28 would be 2 Cups and the remaining 5 would be roughly 1/3 cup for a total of 2 and 1/3 cups of crumbs to cover the pan.

    The reason I bring this up is if someone might want to use another type of Cracker such as Cheez-it or Ritz for any savory pies/Casseroles.

  • @trumbachd1 I have nothing against graham crackers, but I like to use vanilla flavored wafer cookies for my crust, among many other things. Like lemon cookies, I only use altons vanilla wafer recipe

  • If cheesecake is really a pie, would it taste good if you just poured the batter into a premade pie crust? It certainly would be easier to make at home that way.

  • @missbeatrix1 the "tang" I've never encountered honestly. As for the richness, the more you beat it, the lighter it'll get. Hence "italian" type that is very light and airy almost.

    There is too a corner. The horizontal base meets vertical side meets to form a right angle or 90 degrees. Therefore, a the round pan does have corners.

  • @PCGAMEfreak a corner is where three (or more) planes meet. And the round side of the pan can either be one side (Thus the round pan having no corners) or infinity sides (Thus having infinity corners.)

  • I'll try to help you by making a guess. As I recall digestives are sold in cylindrical packets of 14 oz. Try crushing 2+1/2 packets and compare visually to the amount Alton shows. The reason for not over-crushing is probably to make the crust crunchier, finer particles = softer crust. Good luck!

  • I would think that my statement implied that I had not found or seen part II. I love Good Eats and their work. I enjoy this series and love to cook. It was not meant to be a negative response, instead it was meant to say that I could not find part II the day I watched part 1. That's what I mean. Have a good day.

  • mine has never been choppy that i can remember and i have watched a ton of the episodes likethehat uploaded so it prolly has something to do with how fast your internet it....and you shouldnt complain they spend a ton of time uploading this just so you can watch it

  • The person added in an intro 'like the hat', and then re-rendered it. To save on file size, they rendered at a low quality I'm sure. That's why the first half of every episode, which has the intro, looks terrible. While the second half, without the intro, looks much better.

  • He said hot glue. If you choose to do this watch the temp of the gun. They have Low and High temp guns and some things do not react to the higher temps while some things won't work at all with the lower temps.

  • So, is the title of this show supposed to be a parody of The Trouble With Tribbles? I'm trying to figure it out. I only have one complaint with these shows: The recipes sound so delicious and it's so inspiring to cook them. The problem? There aren't enough hours in the day to cook it all!

  • I wish I had watched this before I made my first cheesecake. I didn't cream the sugar and cream cheese completely together before adding the liquid. Needless to say, my cheesecake came out like crap. :(

    But good additions to the crust are coconut and crushed almonds.
