This one uses 20oz cream cheese, saves from of the crumbs for the size instead of pushing them up the side, blind bakes for 10 minutes, and only bakes for 1 hour, followed by 1 hour rest in oven. The book uses 24 oz cream cheese, puts the cheese and sugar in before the sour cream, pushes the crumbs up the size, blind bakes for 15 minutes, and bakes for 2 hours before a 1.5 hour rest. Color me confused.
Fun fact: When searching "good eats s5e7p1" to find this episode (watching every episode in order...got a ways to go!), the fifth result is "The Prodigy - Firestarter". Buh?
