GOOD IDEA to show this Nachos recipe. In Matehuala, State of San Luis Potosi, Mexico, (300 milles south Laredo TX) in 1957 at the "Las Palmas" Motel, they served this tipe of Nachos. The Cheff´s name was "Ignacio", Everybodie call him "Nacho" and believed then that this was his creation. (at that time nobodie was thinking about patenting this recipes) He was brought from Monterrey when the Motel opened. (from Louisiana´s Restaurant).
There is a little difference in the recipe. As most cheffs know, the tortillas that are left from the day before are cut in four pieces and deep fried in oil in big amounts and then drain them in a strainer, we call them "totopos" to serve them with guacamole or refried beens.
The cheddar cheese was made in México and we called it "queso amarillo" which was an american invention of course. The small difference in the recipe was that the jalapeño was put on the cheese before cooking the nachos in the oven and in long slices, if too long, making an "s" form on the cheese, and not in ring shape.
This was a fast snack because the tortillas were already fried and the oven at the kitchen was most of the day hot. The fried totopos were not so flat due to the amount of oil they used.
Many Americans used to stop at this Motel as a midway point in their way to Mexico City ant they used to ask allways for it as a favorite snack at the bar, the bowling or the swimming pool. It was served in a 14 inches round tray.
Now in most places in Mexico, the "nachos" young guys know are quite different. They put the fried totopos in a plastic bowl, then a big spoon of beans on them and finally an amount of liquid cheddar cheese and jalapeño slices and you need a plastic spoon to help you eat them. It is a completelly different look and taste. I would recommend people to try them the old way.
You could make this go a lot faster by dropping a ton of these in to DEEP fry, & then just fish em out with a spider/strainer. Pan-frying each nacho chip is just ridiculous. You could also do this in an oven for even browning, without burning. & you wouldn't waste time baby sitting a pan either. Let's get real. Freshly fried chips are the best, but let's be smart about it.....

@teufelhexen your absolutely right, just about anyone serious about their athletisism will find it difficult to be a vegetarian and nearly impossible to be a veagan. However there is soy protein... besides, the sad truth is that the majority of ppl who eat chicken wings in america don't need them because they stopped getting exercise 35 years ago when they were allowed to get out of gym class. It wouldn't hurt them to eat some veggies instead.
It's a mighty good source of it though. And I'm not saying there are no other foods that have a high protein count. There are plenty of non meat foods that have lots of protein, I agree.
My point here, in response to GFC, is simply that people need protein intake. This idiot says we can get by without any protein intake whatsoever.

These are good. But if you don't have the time, use store-bought large plain, low salt, corn tortilla chips. Put them on a non-stick cookie sheet, cover them with lots of pre-shredded extra sharp cheddar, (and Monterrey Jack), bake until the cheese melts, top with jalapeno slices, a sprinkle of crushed red pepper, a dash of medium hot sauce, and serve with salsa, sour cream, guacamole, and lots of cold beer. (20mins. - start to finish.)
@uchihajaime1 - Well, you know...? Bachelor cooking. BTW, if you add a 1/2 lbs. of browned ground beef, before the cheese, it's no longer a snack. It becomes dinner.

Yes, humans are omnivores, but vegetarians don't all have a lack of protein. My sister has been a vegetarian for a while, and gets her protein from peanut butter, which gives an ample supply.
The point is tastiness, not how cheaply you can by them! Those look freakin' scrumptious.
And I'm going to have to majorly disagree with you on the "bad salesman" part -- I can't imagine a better person to tell you what to eat on a game day. Seriously!
