It all depends where they live and how contaminated the water is (with mercury). For example, places in Asia and South America still use DDT as a pesticide. When it rains the DDT goes to the ocean and the plankton feed off the contaminated water, and the small fish eat the plankton, so they become contaminated too.
I'm not 100% sure for essential oils or fish oil, but im almost positive they are fat soluble (like A or E) so you will need to eat something slightly fatty before taking the supplement for the oil to fully absorb.
