First of all, they're anti-lock brakes, so when you stomp on the brakes and get the bright idea to TURN while doing so, you smash into a wall.

Second of all, the only way to play this game without sliding from here to Timbuktu is with the assists on. I tried making it work with them off, but the poor representation of driving in this game makes it damn near impossible.
