  • Nice little recipe.. and knowing how to spatchcock/ flatten a chicken/ whatever the fuck that bird was (a guinea fowl?) is a very good technique to know, learn... cherish. He's a good cook... I do wonder if he's eaten in St.John if he's been to London.

  • joe, Cosentino IS a remarkable chef, but Symon is a certified MASTER CHEF with a wealth of knowledge and ability as well. Cosentino got cut for the same reason Nate Appleman did this year: he relies too much on his mastery of offal. Sadly for him, there was another pork enthusiast who did things just as well.
