There was once a taste test done of 10 different kinds of bacon. the only one that got a bad review was the sodium nitrite free bacon. People don't love bacon, they love salt and greasy/oily foods.

I've been a vegetarian for over 5 years, and what I miss most about meat is the taste, but reflectively the taste was never the meat itself, it was the seasonings and the sauces.

@sirdeadlock I'll cop to that. salt brings out the flavour of meat. Like a steak by itself seems slightly bland but add some salt and all sorts of flavours explode on the tongue. I wouldn't dare say they're based just in the salt. it's a strange alchemy. For instance beef jerky. subtract the meat and all you get is sodium and smoke. I've tried smoked salt it was terrible.
