Some people are more suggestible than others, regardless Derren makes sure his subjects are in sufficient level of trance (& confusion) and that he has sufficient rapport to ensure that he has bypassed the critical factor of the mind. This way he is influencing people at an unconscious level, so it does not matter if what he (or they) are saying or doing makes no sense. We see what he is doing because we are using the power of logical observation and are not in a trance state.
