For those people saying it's Sodium Acetate; shut up. Liquids that get below the freezing point need something to crystallize on; normal water has impurities in it that allow it to do so. However, fiji water is 100% pure water; therefore, it can't freeze on it's own at 0 C. That, coupled with the fact that the water can't freeze onto the plastic that the bottles are made of, lets water fall below freezing and stay liquid. Agitating the molecules sort of 'revives' them into the solid state.
@DrankenBustards water can most definitely freeze on its own at 0 C, it just has to have a certain amount of energy removed called the heat of fusion look it up..
@TheMrThijsie For what, the beer? I'm not sure what it's freezing point is, I just know that it takes about three hours in the freezer to get it cold enough. It actually makes a pretty cool party trick. I recommend using beer with clear bottles, like Corona. Can't really see what's going with brown and green bottles.
@TheMrThijsie It's called supercooling. Essentially what happens is that the water inside the bottle is already below it's freezing point. The shock from him hitting the bottle disturbs the water molecules, creating nucleation sites, which allow the formation of ice crystals. Those ice crystals than start making more ice crystals in a chain reaction, until the water is completely frozen. You can do the same thing with a beer, but it takes longer to get it cold enough.
actually it is a fisical reaction of the water that's a trick to flash freez anything containing water in mexico. when the water turns to a certain temperature(i dunno wich one) just hit it or shake it and it'll freeze right away.
It’s caused by supercooling. A liquid below its freezing point will only crystallize in the presence of a seed crystal or nucleus around which a crystal structure can form.
A regular glass of tap water will freeze at the normal temperature because the solution contains tiny particles of dust and dissolved gas, but A smooth container of distilled water can be cooled before freezing occurs automatically.
By taking the bottle out of the freezer and shaking it, you are allowing nucleation.

@buddytazzer nope im not gay, and im not against gays. people who are against gays are dumb in my eyes, that includes racists, womanizer, and sexists. however the point is its his sister and if you had any class what so ever then you would have thought before you spoke, but your IQ but be the same as a caveman's
@buddytazzer ok, because you still dont see my point i will dumb it down for you. if you see a "hott" girl and your talking to her brother, its smart to not comment saying "your sisters pretty hott XD". The main point is that you should have more class and not tell him that. just saying its better to be polite then a dick
@buddytazzer well a better way to say it would be "your sister is very pretty, cute, elegant, breath taking, beauty at its best, something more on those lines
This isn't supercooling. You had to cool it to begin with. If this is just water, all that you did is chill it below freezing without providing the water with any crystalline structure to create ice around (most likely due to pressure?)
anyway, striking the side of the bottle creates a seed crystal in the water, around which the ice crystallizes.
So "supercooling" isn't correct---you had to chill this down to begin with, and probably, pretty carefully.
I love these instant freeze clips. Everyone becomes an expert chemist, but no one have real arguments why it doest work, do you even try before you say "nay" ? :P

LOL this isnt just water, Sodium acetate is the main chemical and no its not freezing, it is merely crystallizing. P.S the bottle actually turns pretty hot when it does so.
@jackaces08 this does work because i never saw these videos and had nestleys water freeze as i drank it from my freezer. it had been in the freezer for about 4 hours. scared the hell out of me, damn near choked... only worked with nesley water though...
@superdoridori uhm, no it isnt sodium acetate. This is real water. If pure enough water is left undisturbed ( no movements) in a freezer you can do this. Sometimes you dont even have to hit it, just shake it or even squeeze the bottle.

@superdoridori dude you need to have some chemistry classes. Its supercooled water which is actually colder than the ice, when he agetates it it turns solid because it crystalizes. But you can have what you said, they make baby milk warmers with that.
@superdoridori it is just water... just like purified water will not boil... it will not freeze... you need a polutant to freeze water... dust, air...ect. it's pure water.... the sodium Acetate idea you talking about generates heat and is found in those hand warmer things that you click the zink chip in the package and cause a chemical reaction.
@dukeish2003 What are you talking about? Of course purified water will boil. It will freeze as well. It's dependant on crystal nucleation, and nothing to do with "pollutants".
@superdoridori Sodium acetate is more dense in its solid state than liquid state unlike water and would thus crystallize from the bottom up. This would be because the first crystal would just sink and when others build from it, the effect would appear like it is growing from the bottom. I think its real.
so easy to do. put it in freezer for 3 to 5 hours. take it out just before it start to freeze (cap on at all times). when you hit it, it relieves the pressure inside the bottle, allowing it to have enough space to freeze (it couldnt before).
The purer the water the better. Distilled water works best. The mineral impurities cause the water crystallize at a higher temperature. O deg C for unpure water. Approximately -40o C for distilled water (supercooled). Impurities cause the water to crystallize, and freeze, at higher temperatures.
One thing to remember is in order to do this you need to be sure that your freezer doesn't vibrate much as some will cause the water to freeze. Also you need one that is cold enough or very little ice will form. When water rapidly turns to ice it gives off a lot of heat that is absorbed by the surrounding water. As a result only a fraction of the water will actually solidify. The colder you make it the more ice you get.
it will work anyone who thinks it wont but somtimes the temprature in the freezer is different so it takes longer in some freezers but no chemicals involed just put a bottle of water in the freezer and let it get as cold as it will go (without letting it freeze ) then after aprox 2 hrs get it out and bang it
the freezer removes the molecular energy from the water so the amount of heat energy in Joules is very low, however that has not translated to the actual temperature yet. As soon as the bottle is hit, the water molecules start to take the form based on their actual molecular energy levels.
the same can be done with a microwave. Just microwave pure water in a mug for a few mins. when you take it out, it doesn't boil until something touches it like a tea bag or spoon, then it bubbles.
Ok, now first off, you should put about 5 bottles in the freezer because this is not always 100% because not all water is best to use. Keep in freeze for 2 hours, and has to be as close to 0 degrees as possible. Just remember, the key to this experiment is temperature and time the bottle is in the freezer. If this still doesn't work then use Fiji water or put more water bottles in the freezer for better chances. Good Luck, and ask if you still need help.
heres something to try thats even more fun. shove a 2L coke in your freezer, then forget about it. then remember about it, run and open the door. take it out, and open. the coke will go all in your face, all over the kitchen. then clean it up or alternatively, leave it for someone else to clean up. its best if you leave the coke for a good hour or so, in order to achieve this 'super cooled' effect. some of the coke should be frozen, some not. give it a try!
