You addressed Leviticus - one of the 5 books of the old testament, written by Moses. Those are Hebraic laws, not Gentile. The Jews are to live by those laws as it names them specifically. As far as seafood, only fish with scales are Kosher. Shellfish and catfish are examples. Cloven hoofs are what livestock were to be eaten, no rabbits, squirrels etc. Turkeys and chickens are allowed.

Personal values differs between cultures and it differs between eras of time. The bible is one of the texts that has influenced us greatly, and it is one (maybe the only?) reason why any other sexuality than the heteronormative one is frowned upon.

Hello, I'm not a religious fanatic but I try. Your quotes were taken out of context if you haven't been told that already. Like things with slaves back in that day it was better to make people slaves instead of letting them starve. It is kinda like it is better to make somebody go to work instead of have them homeless.
I know. But in the same way, quotes are used in a similar way to defend oppression of women and homosexuals (to name a few). It's important to remember, that a quote from the bible needs to be interpreted through the eyes of their time (as you say), and I think this "letter" is a good example of that.
Leviticus 23:3, Exodus 35:2 and Exodus 34:21 say that working on the 7th day is not allowed and in Numbers 15:32, 36 a man is stoned for gathering sticks on the 7th day.
Do you show equal opposition to sunday workers as you do to those who engage in homosexual acts? Why are these parts of the bible I mentioned not just as important?
