@notjustanotherbasso I have used a bit of yogurt with lemon juice. A 1/4 of red wine will work too. The coffee adds a snall amount of bitterness. Work really well. Cold because hot would cook the meat. Coffee is used in many recipes. cheers, KtC
This looks amazing!! I work in a Middle Eastern restaurant, and the only thing we do different is we cook the shawrma after it is sliced from the roast. You grill it in a pan after it's sliced. But this is a sure fire way to do it at home. And I bought shwarma spices premixed at the local grocery. This is way simpler, amazing!!!:)
@HourGlassbyLove Hello! I learned this one from a friend who had a small take-out place. He passed on this recipe to me if I ever required a quick fix in a pinch. It seems to works quite well, I have enjoyed it a few times now. Thank you for your thoughts and insight. cheers, KtC
the best Shawarmas I've ever tasted in the world are from a distant place in Granada, Spain....in the Moorish section...it's called Sacromonte, Granada....the best Shawarmas ever!!!
Thats a wicked lunch or dinner! Especially done on the bbq.. mmmm I could eat them pretty much everyday and not get sick of them.. and wicked for ya too! (depending on the veg's ya add) ; )
@agammuhajir try watching the hit tv show - iron chef - they literally have 30 chefs working on this one delicious sandwhich which some guy polishes off in one bite.
There are various ways to prepare. Usually shaped in a cone and cooked over fire or spit. This method works great at home. Give a try. Many restaurants serve them up too. cheers! KtC
Some folks use a bit of red wine. You need some sort of liquid. Although not common I was showed using coffee a long time ago by someone in the know. It works wonders with this recipe. You do not use very much and the stronger the better. Try a bit of wine if coffee isn'y your thing. cheers! KtC
Yes, it is fairly straight forward. A bit of each seasoning is good for a pound of meat, just a bit of coffee or as mentioned in other comments a wine or vinegar. (I use the coffee, I have seen this many times and it works quite well). Good Luck! KtC
400g. beef, 15ml. oil/lemon/onion/garlic, 5ml. dry spices. 250ml. liquid (I use a dark cold coffee brew). Perhaps, try wine vinegar or yogurt (many options on liquid). cheers, KtC
4 dollars? here in the phil you could buy one for less than one dollar and with cheese you can get it for jus over a dollar. BTW 30 dollars could make you more than a bundle of those tasty juicy shawarmas. Hummus also is a great alternative to tahini (actually it was the other way around).
MEN, THIS IS GREAT! cant wait to try. though theres one thing that confuses me. why does some recipes emphasize the sauce, but the meats recipe is so simple. while here u need a heck a lot of spices.which would make the shawarma good, the meat or the sauce?
The meat and how it is prepared is the main thing. The 'tahini' sauce is very important however, I have tried various sauces when I have no Tahini (a creamy cucumber or garlic dressing can be tasty). Yes, there are a few spices and herbs but that's what makes it work. good luck! ktc

i miss the shawarma shops in ottawa so much...wish i knew how to make the garlic sauce some of them make
NewSprayer 8 months ago
@NewSprayer Try this,
garlic cloves 4 large
lemon juice 2/3 cup
salt 1 tsp.
21/2 to 3 cups olive oil
Blend first three very well. Add slowly (while blending) the oil until smooth. Not too thick, not too thin.
I go a bit more on the garlic myself. But not too much or you may need more lemon juice.
cheers from Ottawa! KtC

it adds a bit of bitter to the meat. Works well I think with the recipe instead of water or a wine. Just a bit to soak the meat. cheers! KtC

I also like to marinate my beef with coconut milk it makes the meat really tender and also brings out the taste.
