  • In another video it says if you over knead the gluten strands become too strong and your bread will be tough. Which is true??

  • @skittle68 Great question - It's difficult to over-knead by hand, but easier with a kitchenaid. Try the window pane test: Pinch off a small ball of the kneaded dough and roll into a smooth ball. Using both hands, stretch the dough into a thin rectangle. If the dough breaks, it needs to be kneaded a bit more. If it pulls into a thin, almost translucent sheet, it's ready to proof. Good luck!
