@skittle68 Great question - It's difficult to over-knead by hand, but easier with a kitchenaid. Try the window pane test: Pinch off a small ball of the kneaded dough and roll into a smooth ball. Using both hands, stretch the dough into a thin rectangle. If the dough breaks, it needs to be kneaded a bit more. If it pulls into a thin, almost translucent sheet, it's ready to proof. Good luck!
In another video it says if you over knead the gluten strands become too strong and your bread will be tough. Which is true??
